Vegan AND wheat-free, this summery cake is fruity, refreshing and down right delicious!
This cake is made up of two moist layers of lemon sponge sandwiched together with zesty lemon buttercream and fruity strawberry raspberry jam. Topped with lemon buttercream and a berry jam swirl, and finished with colourful edible petals and freeze-dried strawberry and raspberry pieces. Yum!!

Sponge: ground almonds (NUTS), tapioca starch, potato starch, rice flour, chickpea flour, xanthan gum, salt, baking powder, lemon zest, lemon extract, OAT milk; OAT base (water, oat (9.8%)), chicory root fiber, sunflower oil, calcium (tri-calcium phosphate), sea salt, stabilizer (gellan gum), vitamins (B2, B12, D2), apple puree, vanilla bean paste, lemon juice, caster sugar; Vegan Lemon Buttercream: vegan butter block (palm oil, rapeseed oil, water, salt (1.1%), emulsifiers (mono and di-glycerides of fatty acids), flavoring, vitamins A and D, color (carotenes), lemon extract, rice vinegar, icing sugar, golden syrup; Strawberry Raspberry Berry Jam; strawberry, raspberry, sugar, pectin, citric acid; Hydrangea Dried Petals, Freeze Dried Raspberry, Freeze Dried Strawberry.
How your cake arrives
The cake is protected with a card collar around the cake and boards on the top and bottom, which is then packed inside a biodegradable bag. This helps remove the cake easily from the tin without anything getting damaged.
